During harvest, all grapes are processed in the backyard. whole bunches go straight into screw press. no additives, no temperature control. Juice goes straight into fiberglass and stainless steel tanks. racking before fermentation kicks in. natural fermentation. no temperature control. All 5 components of ROZSA were mostly co-fermenting and matured on gross lees for 6-7 months without any additives, without fining and without filtration.

Strawberries and limes packed into a bottle. Nothing too sweet and very easy to drink! Nested on the shallow slops of Burgenland next to the beautiful Neusiedl lake are the vineyards of Maria and Alex Koppitsch. Since 2011 they are preserving the natural wine making traditions that have been in their family for over 500 years now.

Offbeat Wines was established with a simple aim – to produce pure, unadulterated, and enjoyable English wines with environmental preservation and sustainability at the forefront of everything they do.

The quantity of available fruit was just a bit shy of what's needed to fill a traditional basket press, so Dan left in some just-pressed Pinot Noir and threw the Pinot Meunier on top. Pressed directly -with that second squeeze of the Pinot Noir-he extracted a fair bit of colour, a coppery peachy juice that was sent straight to an 800l amphora for the winter. As the cellar warmed through spring, the wine underwent a brief malolactic fermentation to fill out the frame, and was bottled under crown cap with no sulphur on the 21st of June.

Made using the solera system where wines of different vintages are blended together to keep consistency. Here the St Laurent is aged in stainless steel tanks in the solera system. All three grapes are fermented and aged separately. The Rosler is whole bunch fermented and pressed straight away. The Syrah has two days of maceration. The St Laurent is taken from the solera and aged for 12 months in ampora. Unfined, unfiltered and no sulphur added.

This is a vibrant pink wine that is more like a chilled red wine. Packed with fresh strawberry and an underlying creaminess to it. The perfect sunshine drinker with amazing depth of flavour. A really unique wine that is a showcase of quality artisan wine making. The Zillinger family have been running these vineyards biodynamically for 30 years.

A light red (that tastes delicious chilled, too) from ‘garagista’ winemakers the Stoppini family that combines old-age techniques and new-age winemaking. Murato translates as ‘the wall’, and this wine is so-called because it was made using an ancient Etruscan process whereby the grapes are dropped into an open-top vat and literally walled-in with a layer of plaster, creating a hard cap which, in the case of this wine, they left there for 30 days. This is essentially an age-old form of carbonic maceration, which is a type of winemaking where fermentation is not activated by yeast but instead starts within the grapes themselves.

Usually a winemaker will seal a vessel with carbon dioxide and then add whole, intact bunches of grapes - in this oxygen-free environment the fruit begins to ferment from the inside out. The available CO2 goes about breaking down sugars and this, in turn, produces alcohol. And if this is beginning to sound a little bit complicated, just think how creative and talented the Etruscans were to work this out around 525 B.C. Today, carbonic maceration is known for creating light, fruity reds. A very special but easy-going light red, one of only 1,800 bottles made from this vintage.

Grapes are hand-harvested and direct pressed to stainless steel tanks, with just a few hours of contact with the skins to provide color. Fermentation takes place under temperature control and lasts about two weeks. The wine rests for another 4 weeks and then is racked once, then rests on the lees for another 8 weeks. The wine is bottled unfined and unfiltered, with a small addition of sulphur.

Light, juicy, fresh and fun. The perfect summer rosé full of personality, red fruits and lip smacking acidity.

Christina Netzl has been working her family vineyards since 2007 focusing on the typical style of their unique Carnuntum region. Soils are red gravel and loess. During this time soil conditions, micro-climates and natural conditions in the vineyards got more and more important to her and her husband and so they decided to change to organic production in 2013. They have been certified organic since 2018.

Gianmarco Antonuzzi and Clementine Bouveron tend around 14 hectares of land with vineyards amongst olive groves, chestnut trees, shrubs and oaks. Volcanic soils, rich in iron and minerals. They work biodynamically on nearly 20 hectares. He is one of the most innovative farmers in the region, implementing “bee-hotels” and compost tea preparations to enhance biodiversity.

This rosato is a roughly even blend of white (Procanico) and red (Sangiovese) grapes that spent five days fermenting on the skins, before being pressed off to vat until May.

A gorgeous, deep ruby, it really impresses with its little red fruits, fine tannins and a refreshing, blood orange bitterness.

Trish lives in a small cottage in Località Gazzetta on the hills above the village of Bolsena in Lazio’s north. In this beautiful spot with views across Lago di Bolsena she farms two hectares of old vineyards planted with Procanico and Ansonica, with a little Malvasia and Moscato scattered throughout. The lake is one of the largest volcanic lakes in Europe and is blessed with an interesting microclimate due to the special wind patterns created by this great mass of water as it heats and cools. The vineyards sit between the Mediterranean Sea and the Apennine Mountains, which makes for a temperate climate kept fresh by mountain breezes. The soils, mainly ash and sand of volcanic origins, possess an interesting minerality that each variety expresses differently.

Situated just outside Verona, in the Morainic Hills near Lake Garda, Vini Sassara is a new project from longtime natural winemakers Alessia and Stefano Bertaiola. With a background in agricultural research and development, Alessia joined forces with third-generation winemaker Stefano more than a decade ago and together they farm a 10-hectare site that has been in Stefano’s family for 50 years. This is Bardolino country, a DOC in the Veneto region most famous for its Valpolicella-style light reds and rosé wines. But being natural winemakers, Alessia and Stefano are less concerned with what conventional winemakers are doing in the area and instead have set out to show what the indigenous grapes and Bardolino terroir are capable of when allowed to express themselves naturally.

With its vibrant magenta pink hue and frothy top, you'd be forgiven for thinking you were in for a sugar bomb of a sparkling wine. But appearances can be deceptive sometimes. With no added sugar (unlike most conventional sparkling wines) this sparkling pinot noir rosato tastes more like a freshly picked blackberry from a snow-covered hedge.

Fourth generation winemaker Matteo Furlani tends to his family's small parcels of vines, high above the city of Trento. Like his father and grandfather, he sees no need to use synthetic chemicals on the land, incorporating biodynamic preparations and natural practices instead to create his incredible range of wines, which include a series of natural sparklers in milky shades of magenta, pink and white. The soil is light Dolomitic rock rich in calcium and magnesium. 750m altitude.
